The Culinary World Cup is back this year in November, and chefmalta will be there participating in the category of regional teams, in this prestigious and definately the biggest event of the year. The 4 man team together with a back-up team of 4 more, will be travelling to Luxembourg, to present a buffet as requested in the participating category.

chefmalta would like to extend its invitation for this unique culinary experience, to individual chefs who would like to participate in this event, or just travel to watch the latest creme de la creme culinary experts from around the globe compete for the Culinary World Cup. chefmalta is in the process of putting together an interesting culinary and cultural programme for all those interested in joining in this trip. More details will be posted on this site in due course, as soon as the programme will be finalised

START OF A NEW YEAR............. cooking for a cause....... not for awards

chefmalta with the help of the chefmalta culinary team, started the year with a generous gesture, towards the community. On Thursday 7th January 2010, the culinary team from chefmalta led by chefmalta director Joseph Vella and team manager Gordon Amato, made a visit to Dar Santa Maria in Hal-Farrug, loaded with ingredients to prepare a delicious 3 course meal for the drug rehabilitation programme residents that reside in this property.

This emotional and worthy experience, brought together the chefmalta culinary team together for the first time this year, after the busy Christmas season. The team prepared a three course dinner mostly prepared on the premises, that consisted of a mouthwatering pasta as a starter. a nicely roasted chicken breast with herbed crust, prosciutto and cheese focaccia, roasted potatoes, vegetable panache and wild mushroom veloute. As dessert a nice semi-freddo was served with berry compote.

All residents and staff appreciated the well cooked meal and most of all, the gesture from the team to accept to go into their residence and prepare a special evening for them, as a celebration of a new year.

chefmalta would like to thank Gordon Amato - team manager for the co-ordination of the team with this event, and the team members for offering their time to prepare this dinner, Noel Azzopardi, Matthew Schembri, and Jean Paul Zerafa.

chefmalta would like to thank the following for their support, and generosity. This event would not have been possible without the help of Roger Friggieri, Executive Chef at the Grand Hotel Excelsior, Jimmy Vella Fruit & Veg Co.Ltd, Alf Mizzi & Sons Ltd, Robert Debono Fruit & Veg, Reflections Sports Bar & Grill and Jigami International Hairdressing.

chefmalta team wins big in Calabria....... a year to remember for our team

The Costa Viola culinary championships have seen chefmalta team bring home more awards for the recently formed team. After the success in Constanta, in Romania, the young and dynamic team managed to win various categories in which the team participated.

A short 24 hour trip to the beautiful mountains in Calabria, were enough for the chefmalta team, to bring back a full load of silverware and medals back to Malta. A package was offered by chefmalta to all participants. chefmalta took care of all arrangements, that included flights, transfers, accomodation, working kitchen, leisure time and a typical Calabria lunch before leaving back to Malta

Led once again by Gordon Amato, the Junior team, with Matthew Schembri's outstanding rabbit dish, won the medal for, best in category award in the authentic Calabria dish, using the local ingredients to their best. Also Noel Azzopardi won the cold plated first course dish category with his innovative " 5 way duck", and 2nd overall in the Kitchen art category for his chocolate sculpture.

The student team coached by Gordon Amato, and formed by Mark Kirk, Charelle, Naastasia, and Christian, placed 2nd overall in the students category , preparing a 4 course dinner. a nice number of 9 students teams participated in the event.

Also the Malta team members received the judges awards for best meat main course, best vegetarian dish, best fish dish and best overall dish in the exhibition. Surely a result that filled the team with pride and willingness to look forward to their next trip. like the team, any interested chefs and pastry chefs and kitchen artists are welcome to come forward and participate in our culinary trips.

chefmalta would like to thank all the team members for their effort, hard work and commitment shown on this occasion to make chefmalta another success story.

Chefmalta Team Campania wins the International Junior Chefs Championships in Romania



The Junior chefmalta team campania has just returned from Constanta, Romania, with the championship trophy. The black sea setting of this competition brought luck and success for the four Maltese chefs and one italian chef, who together formed the team.

This amalgamation of two coutries as one team, was the first of its kind, and the results proved the team management right. for a full reportage and photos of the event, click on the above title or go directly to the Culinary Team Page.

chefmalta joins Italian Chefs Association
chefmalta has been evolving in the last months and has moved on from being just a website for chefs, into an organization that will be promoting chefs to express their culinary skills throughout the world. The first step to make this possible was to join a professional chefs' body in order to participate in culinary events.

This was made possible through various meetings with the Italian Chefs Association, who suggested the Associazione Cuochi Campania, who happens to be the nearest association geographically. The fruit of these discussions came out shortly with the director of chefmalta, Joseph Vella, being invited and presented with a recognition plaque in an event that took place in the southern part of Italy, precisely Cancello ed Arnone, for the yearly Mozzarella festival.

A delegation of chefs from the Italian Association will be joining us in Malta, in Mellieha and will be preparing mouthwatering dishes, all involving Buffalo products, such as the famous Mozzarella, Salami, Proscuitto, Ricotta, Cacciotta all prepared with Local Mellieha Fields grown vegetables and oher products.

August 2009. Joseph Vella travelled to Cancello ed Arnone, Italy, to be presented with a recognition award, during the Mozzarella festival which is held in this region yearly. Mr. Vella was the special guest of the Mayor of Cancello ed Arnone and the President of the Italian Chefs Association regione Campania, Mr.Antonio del Sole.

During this event Mr. Vella was also supervising the various mozzarella dished being prepared on the evening, in order to get some interesting ideas that can be repeated at the 3 day festival in his home town of Mellieha, Iljieli Mellehin, which will be taking place in the village square from 11 to 13 September, when a delegation of the Italian Chefs Association will be arriving with the famous Buffalo Mozzarella Camapana to show off this beauty and taste this southern Italian delicacy to those present, in Panini, Wraps and Pasta dishes. A buffet with buffalo products will be available on Saturday 12 September.
